Don your chef’s toque for cooking classes in Italy’s Puglia region, where olive oil, pasta, cheese and other locally produced ingredients form the foundation of a simply spectacular cuisine. Travel to traditional farmsteads and to ancient olive groves, where you can enter underground hypogeum oil mills, some dating back 2,000 years. All around this “heel of Italy’s boot,” you’ll explore fascinating towns and villages like Alberobello, a UNESCO World Heritage Site renowned for its trulli (stone huts with distinctive conical roofs) and Lecce, with its stunning Roman ruins and Baroque architecture. From your home base in Ostuni — known as “The White City” for its dazzling whitewashed buildings — you’ll also take a field trip to the seaside capital, Bari, site of the famed 11th-century Basilica of St. Nicholas.
