I would highly recommend The Best of Oman tour. Oman may be the last Middle Eastern country that you would still have contact with the locals. It is not the modern country that Abu Dhabi and Dubai have become, where your contact is mostly with guest workers and not the locals. Oman still has many of their traditions and values. Men still wear their traditional clothing. In Oman you can still see camels and livestock markets.
