Afternoon: Check into your assigned room at the Heartwood Lodge and pick up registration packets.

Dinner: Your program coordinator will be on hand to welcome you as you arrive for the program. Enjoy the grounds and return for welcome dinner with Chef Betsy French.

Evening: Orientation which will include a review of class contents and an overview of week's activities

Activity note: We'll explore the life of the clam. Think soups and chowders.

Breakfast: Enjoy healthy breakfast fare at the Heartwood Lodge dining room.

Morning: Vans will pick you up for excursion to Beal Island for the Down East Institute for an exploration of the circle of life on the rugged coast of Maine. We will explore the cycles of the marine lives and how they support each other. This visit will open your awareness to many aspects of marine life.

Lunch: For lunch, we'll head to Helen's in Machias. They are famous for their fish and chips, chowders, and other fine selections..

Afternoon: After lunch, we'll head to Maine Sea Salt Company where we will be introduced to the aspects of gleaning salt from the sea. This relatively new business will show us their unique process and show us the many ways to produce their product.

Dinner: Enjoy the camaraderie of sharing the fine food (you can bring your own wine) with fellow students. Expect good conversation. Possible Menu: Fish two ways: Fish tacos w Blueberry Salsa Macadamia-crusted Haddock w Orange Beurre Blanc and Blueberry Salsa Apple Pie

Activity note: Explore the Bay aboard the Pier Pressure. What fish will it be tonight?

Breakfast: Enjoy a healthy breakfast at the Heartwood Lodge dining hall.

Morning: Van will transport you to Eastport's breakwater where we will catch a cruise aboard the Pier Pressure, an authentic Maine lobster boat. We'll cruise up Passamaquoddy Bay, amid spectacular scenery and plentiful wildlife. Look for eagles, seals, porpoises, and herring weirs. We'll be on the lookout for whales and pull in a few lobster traps.

Lunch: We'll enjoy lunch at Eastport's famous Quoddy Bay Lobster where we will dine and be entertained by the lobster story with the wife of a lobsterman. Expect to be surprised and interested in her story.

Afternoon: After lunch, we'll tour historic Eastport and drop by Raye's Mustard Museum and Factory. Then we'll head to class where we will discover wonderful, easy recipies for hectic schedules. This forum will highlight fresh, healthy foods for a healthy lifestyle. Class content may change depending on student selections.

Dinner: Enjoy the camaraderie of sharing the fine food and (wine) with fellow students. Expect good conversation and the occasional local guest. Possible menu: Menus may change according to availability and class preferences: Lobster Risotto Lobster Rolls 2-ways Savory Roasted Sweet Potatoes Royal Rhubarb Cake

Activity note: Explore FDR's summer "cottage" and visit the easternmost lighthouse in the continental US. Think comfort food.

Breakfast: Enjoy a healthy breakfast at the Heartwood Lodge dining hall.

Morning: Today we visit Roosevelt International Park, the summer home of the late President Franklin D. Roosevelt. The park centerpiece is Roosevelt Cottage where the Roosevelt family summered. There is a comprehensive visitor center with numerous interpretative panels, a film, and a tour of the Cottage. After this we will have the honor of "Tea with Eleanor". This is a really fun event with lots of surprises.

Lunch: Enjoy a picnic lunch on Herring Cove beach on Campobello Island. Use this respite to take a stroll on a beautiful rocky beach.

Afternoon: Classes continue at The Commons kitchen with Betsy. Today's class features a presentation on "comfort foods" for easy entertaining. Chef Betsy will innovate and amaze. These are hand's on classes and may always be adjusted to include student requests.

Dinner: Enjoy the camaraderie of sharing the fine food and wine (you may bring your own) with fellow students. Expect good conversation and lively interaction. Possible Menu: New England Clam Chowdah Fish Chowder Biscuits Garden Salad w Blueberry Vinaigrette Blueberry Pie

West Quoddy Head Museum and Lighthouse

Activity note: Think Lobster.

Breakfast: Enjoy a tasty, healthy breakfast at the Heartwood Lodge dining hall.

Morning: Let's head for West Quoddy Head, the eastern point of land in the continental United States. You will enjoy the spectacular lighthouse with magnificent views of Fundy Bay and Grand Manan Island.

Lunch: You'll have time to explore Lubec's historic waterfront in search of treasures and lunch

Afternoon: Enjoy a couple hours of free time before returning to the Commons Kitchen for a cooking class which will feature working with a selection of Maine's renowned seafood, which will include our famous Maine lobster.

Dinner: Enjoy a Maine seafood feast, sharing fine food with fellow students. Expect good conversation. Possible Menu: Lobster Ravioli w Basil/Tomato Cream Sauce Traditional Maine Boiled Lobstah Grilled Corn on Cob Blueberry Cake

Evening: Graduation festivities.

Breakfast: Enjoy a breakfast buffet at the Heartwood Lodge dining hall.

Morning: After enjoying a leisurely breakfast at your inn, finish exploring the Cobscook Bay area on your own and catch all of those highlights you saw but didn't get time to work in during your stay in this beautiful seaside community..

Lunch: Bid a fond farewell to new found friends and promise to come back another time.
