Afternoon: Check into your assigned room at the Heartwood Lodge and pick up registration packets.

Dinner: Your program coordinator will be on hand to welcome you as you arrive for the program. Enjoy the grounds and return for welcome dinner with Chef Georgie Kendall.

Evening: Orientation which will include a review of class contents and an overview of week's activities

Activity note: We'll seek out the best of Eastport. Think soups and chowders.

Breakfast: Enjoy healthy breakfast fare at the Heartwood Lodge dining room.

Morning: Vans will pick you up for excursion to Edmunds where we will head to the authenic, 8-generation Tide Mill Farm for an exploration of the circle of life on the rugged coast of Maine. We will explore the cycles of the animals lives and how they support each other. We'll explore Rachael Bell's goat cheese making operation and observe what makes the place flow. through the life forms.

Lunch: For lunch, we'll head to Perry where we'll encounter some great fish chowder and pie at the New Friendly Restaurant on the Little River.

Afternoon: After lunch, we'll head on north to explore the mysteries of the 1604 French settlement on Saint Croix River, then head on to an organic farm in Robbinston to catch the rest of the sustainable life story so common to this beautiful area. From there we'll head to cooking class Chef Georgie's country farm, located in Perry, Maine, on the shore of beautiful Boyden Lake, located in a picturesque farmhouse complete with barn. The first class will begin with a session featuring authentic Maine chowders and fish stews. These are hands-on classes. You will be working along Chef Georgie for a lesson in these soups which are simple and delicious. Class content may be adjusted to include student selections.

Dinner: Enjoy the camaraderie of sharing the fine food and wine with fellow students. Expect good conversation and an occasional local guest.

Activity note: Explore the Bay aboard the Lady Patricia. What Fish will it be tonight?

Breakfast: Enjoy a healthy breakfast at the Heartwood Lodge dining hall.

Morning: Van will transport you to Eastport's breakwater where we will catch a cruise aboard The Lady Patricia, an authentic Maine lobster boat. We'll cruise up Passamaquoddy Bay, amid spectacular scenery and plentiful wildlife. Look for eagles, seals, porpoises, and herring weirs. We'll be on the lookout for whales and pull in a few lobster traps.

Lunch: We'll enjoy lunch at Eastport's famous Quoddy Bay Lobster where we will dine and be entertained by the lobster story with the wife of a lobsterman. Expect to be surprised and interested in her story.

Afternoon: After lunch, we'll tour historic Eastport and drop by Raye's Mustard Museum and Factory. Then we'll head to class where we will discover wonderful, easy recipies for hectic schedules. This forum will highlight fresh, healthy foods for a healthy lifestyle. Class content may change depending on student selections.

Dinner: Enjoy the camaraderie of sharing the fine food and wine with fellow students. Expect good conversation and the occasional local guest.

Activity note: Explore FDR's summer "cottage" and visit the easternmost lighthouse in the continental US. Think comfort food.

Breakfast: Enjoy a healthy breakfast at the Heartwood Lodge dining hall.

Morning: Travel by van to visit the West Quoddy Light and Museum, the eastern-most point of land in the continental U.S. You will enjoy spectacular views of a rugged coast overlooking Canadian Campobello Island and Grand Manan. Traveling on through Lubec, Maine, we will visit Roosevelt International Park, the summer home of the late President Franklin D. Roosevelt.

Lunch: Enjoy a picnic lunch on Herring Cove beach on Campobello Island. Use this respite to take a stroll on a beautiful rocky beach.

Afternoon: Classes continue at The Commons kitchen with Georgies. Today's class features a presentation on "comfort foods" for easy entertaining. Chef Georgie will innovate and amaze. These are hand's on classes and may always be adjusted to include student requests.

Dinner: Enjoy the camaraderie of sharing the fine food and wine with fellow students. Expect good conversation and the occasional local guest.

Breakfast: Enjoy a tasty, healthy breakfast at the Heartwood Lodge dining hall.

Morning: We'll take over the kitchen at the Heartwood Lodge Common's where we'll explore the craft of bread building.

Lunch: You'll have time to explore Lubec's historic waterfront in search of treasures and lunch

Afternoon: Enjoy a couple hours of free time before returning to the Commons Kitchen for a cooking class which will feature working with a selection of Maine's renowned seafood, which will include our famous Maine lobster.

Dinner: Enjoy a Maine seafood feast, sharing fine food and wine with fellow students. Expect good conversation.

Evening: Graduation festivities.

Breakfast: Enjoy a breakfast buffet at the Heartwood Lodge dining hall.

Morning: After enjoying a leisurely breakfast at your inn, finish exploring the Cobscook Bay area on your own and catch all of those highlights you saw but didn't get time to work in during your stay in this beautiful seaside community..

Lunch: Bid a fond farewell to new found friends and promise to come back another time.
