Afternoon: After arriving at the hotel, check in and get your room, then take some time to unpack, freshen up, and relax. Orientation: The Group Leader will greet everyone and lead introductions. We will review the program theme, the up-to-date Daily Schedule and any changes, discuss safety guidelines, emergency procedures, roles and responsibilities, and answer any questions you may have. Indicated times are approximate. Program activities, schedules, and personnel may need to change due to local circumstances. In the event of changes, we will alert you as quickly as possible. All activities will be led by the Group Leader unless specified otherwise. Thank you for your understanding. We have set aside some free time in the schedule for your personal independent exploration. The Group Leader will often be available during free time to accompany informal excursions, activities, or meals that have been excluded from the program cost. You are welcome to join if you like, with any associated costs on your own. A light snack and welcome drink will be provided at the hotel.

Dinner: At the hotel, we’ll enjoy a set, plated meal featuring regional cuisine and fresh seafood plus a glass of wine, mineral water, and coffee; other beverages available for purchase

Breakfast: Breakfast at the hotel

Morning: Walk through the city. First cooking lesson with Chef Massimo Tomarchio at the local restaurant in Taormina. Lessons will be managed by using two different learning methods. Tomarchio’s organizes his students like a real cooking staff: “brigata di Cucina” with the of aim preparing a complete menu as they were working in a real restaurant and had to serve in a real dining room. Therefore her students will be divided into small groups (two or three people) whom the chef will assign the creation of a dish (that will have to be prepared from the beginning to the end).

Lunch: Lunch at the cooking school.

Afternoon: Guided visit of Taormina. The Ancient city of Taormina is at the center of some of the most spectacular scenery in all of Italy; it boasts views of both the Ionian and Mediterranian seas below and on the southern side, the top of Mount Etna, the highest active volcano in Europe. Taormina has attracted people with its pleasant climate and remarkable setting for centuries. Today visitors can still find fine examples of Taormina’s extraordinary history: the tremendous Greek Theatre, the 10th century Palazzo Corvaja, the 13th century Cathedral of Saint Nicolò, the 16th century Palace of the Dukes of Saint Stefano, the public gardens, the “Badia Vecchia” (Ancient Abbey) and many others. As soon as you arrive in Taormina, you will be captivated by its classical charm and astonishing beauty.

Dinner: This meal has been excluded from the program cost and is on your own to enjoy what you like. The Group Leader will be happy to offer suggestions and give directions.

Afternoon: Excursion to the ancient village of Castelmola, floating 1,800 feet above sea level, it has the most spectacular view in the region. A natural balcony above Taormina, the view from Castelmola is dazzlingly beautiful: from here one can see, among a myriad of prickly pear cactus, the majestic Mt. Etna with towns clinging to its slopes, the Ionian coast, the gulf of Giardini-Naxos, the Cape of Sant´Alessio, the straits of Messina and the Calabrian coast.

Dinner: Dinner on your own.

Breakfast: Breakfast at the Hotel.

Morning: Transfer to Viagrande for a special lecture on Mediterranean Cuisine held by Mrs. Monica Consoli. Cooking lesson at “Antica Casa Siciliana” in Viagrande on the slopes of Mt. Etna near Catania. Here, surrounded by orange groves and vineyards which flourish in Mt. Etna’s fertile soil, the sensual pleasure of Sicilian cuisine comes alive. Her mother Mrs. Eleonora Consoli was the author of the book in 2 volumes, “Sicilia – La Cucina del Sole”, a collection of 486 Sicilian recipes, with quotations from authors associated in some way with the cuisine of the island. Mrs. Consoli’s working method is completely different: her lesson will take place in her cooking school too but with a difference: the students will have to prepare the whole menu because they will have just one lesson at their disposal. Each student will prepare all dishes from pasta, second course…to the dessert.

Afternoon: Return to the hotel and enjoy a free afternoon.

Morning: Excursion to the archeological park of Syracuse. Syracuse was the most important city of Magna Graecia. The city nowadays is notable for its rich Greek history, culture, amphitheaters, architecture, and as the birthplace of the preeminent mathematician and engineer Archimedes.

Lunch: Enjoy the local cuisine as you have lunch on your own in Syracuse.

Afternoon: In the afternoon, return to the hotel and enjoy some free time to relax and explore at your own pace.

Dinner: Dinner at the hotel restaurant.

Lunch: Wine tasting and lunch at the winery.

Afternoon: Excursion to Mount Etna, the highest Mediterranean island mountain and one of the most active volcanoes in the world. The almost continuous eruptive activity of Mount Etna continues to influence volcanology, geophysics and other Earth science disciplines. The volcano also supports important terrestrial ecosystems including endemic flora and fauna and its activity makes it a natural laboratory for the study of ecological and biological processes. Due to its scientific value and historical significance, Mount Etna was recently named a UNESCO World Heritage Site.

Morning: Field trip to Catania. Visit to the “Piscaria”, the famous fish market at Catania. The fish market is the most incredible open air market in Italy. All the sea's bounty is on display, along with fresh meats, vegetables, cheeses, desserts, and all sorts of prepared items. It is a riot of sights, smells, jostling haggling crowds, singing vendors, a tumultuous yet orchestrated symphony of humanity and commerce not to be missed.
