Cajun Cooking, Cuisine & Culture


Cajun cooking is renowned worldwide for its delectable flavors and distinctive spices. Learn to cook Cajun as you explore the history of this “country” cuisine and the culture that gave it birth. Participate in four cooking classes taught by local chefs/cooks at the University of Louisiana's fully-equipped A/C facilities (and possibly a local cooking school), learn to make classic Cajun dishes as well as updated dishes made with local ingredients. We’ll also take field trips to specialty markets and see how boudin, a favorite sausage, is made. We’ll dine out at area restaurants — rustic and refined — and enjoy authentic music. Sure to be a memorable highlight: an excursion into the exotic Louisiana swamp!
