Bread is the staff of life, they say, and nearly every culture has a variety of this staple food to call its own. In Appalachia, the traditional specialty is salt risin’ bread! Join local bakers for a bread-baking class with a special emphasis on using whole grain flours to make a variety of breads: from flat breads to light tender rolls, from sourdoughs to sweet buns, from quick breads to long slow risings.

Nestled in the Appalachian foothills of the Ohio River Valley in the western part of the state, the county seat of Ripley features a historic downtown and theater and easy access to nearby areas of natural beauty, abundant wildlife and hiking trails.

Mary Lind

Mary Beth Lind earned a degree in home economics from Eastern Mennonite University and a degree in foods and nutrition from Oregon State University. A registered dietician, Mary Beth and her husband work together in market gardening and founded Mountain Retreat, a retreat center in rural West Virginia. Mary Beth grew up near her family's steam-powered gristmill in West Virginia, and she and her sister, Sarah Myers, are co-authors of "Recipes from the Old Mill: Baking with Whole Grains.”

Driving Directions
  If you are traveling from the east. Cedar Lakes Crafts Center is located about 3 miles off Interstate-77 near Ripley, WV, south of Parkersburg, WV and north of Charleston, WV. If you are traveling from the east, consider Interstate-68 and Route 40 through Cumberland, MD to Morgantown, WV, south on Interstate-79 to Clarksburg, west on Route 50 to Parkersburg, and south on Interstate-77 to Ripley. Exit Interstate at Exit 132, at bottom of exit ramp, make a left on Route 21 north, go under Interstate, make first right onto Cedar Lakes Drive, Cedar Lakes Conference Center will be 3 1/2 miles on right. Many of the by-ways off the interstate are quite scenic, but they can tend to slow your progress (especially Route 33 East, despite AAA recommendations).
  If you are traveling from the west. Cedar Lakes Crafts Center is located about 3 miles off Interstate-77 near Ripley, WV, south of Parkersburg, WV and north of Charleston, WV. If traveling from the west, drive through Columbus, OH on Interstate-70 and south on Interstate-77 to Ripley. Exit Interstate at Exit 132. At bottom of exit ramp, make a left turn on Route 21 north, go underneath Interstate, make first right onto Cedar Lakes Drive. Cedar Lakes Conference Center is 3 1/2 miles on right. From Louisville, KY, travel on Interstate-64 to Charleston and north on Interstate-77 to Ripley. Exit Interstate at Exit 132. At bottom of exit ramp, make a right turn on to Route 21 north, make immediate first right onto Cedar Lakes Drive. Cedar Lakes Conference Center will be 3 1/2 miles on right. Many of the by-ways off of the interstate are quite scenic, but they can tend to slow your progress (especially Route 33, East, despite AAA recommendations).
Equipment Requirements: Students need to bring an apron, several (2-3) 1-2 qt. mixing bowl and cover (lid or towel), wooden spoon, cooking thermometer/measures at least 100-200 degrees F., set of measuring cups and spoons, rolling pin, baking sheet, rubber spatula, bakers blade (bench knife or dough scraper), pastry cutter, metal turner, a whisk, small bread pan, cooling rack, pastry brush, kitchen timer, small saucepan or non-stick fry pan or cast iron skillet, flatware: knife, fork, spoon, and any other small favorite kitchen tool. Optional: paring knife and a bread knife, muffin pan, baking stone, an ice chest to use to take your goodies home! Also bring some kitchen wisdom-a story, a favorite book or a "show and tell" item. Each day someone will share their "wisdom" with the group.

Day 2: Class/Entertainment
(Monday, April 14)
   
 Breakfast: Served in Lakeview dining hall from 7:30 AM - 8:15 AM.
 Morning: Class starts at 8:45 AM and goes until noon. Participants will be learning how to make various breads.
 Lunch: Served at Lakeview dining hall from 12:00 PM - 1:00 PM.
 Afternoon: Class will begin again after lunch at 1:15 pm and will continue until 4:30 PM.
 Dinner: Served in Lakeview dining hall from 5:00 PM - 6:00 PM.
 Evening: There will be evening entertainment at 7:00 PM.

Day 3: Class/Open Studio
(Tuesday, April 15)
   
 Breakfast: Served in Lakeview dining hall from 7:30 AM - 8:15 AM.
 Morning: Class will begin at 8:45 AM. and go until noon breaking for lunch. Participants will be learning how to make a variety of breads.
 Lunch: Served in Lakeview dining hall from 12:00 PM - 1:00 PM
 Afternoon: Class will continue at 1:15 PM and run until 4:30 PM when participants will be breaking for dinner.
 Dinner: Served in Lakeview dining hall from 5:00 PM - 6:00 PM
 Evening: Participants will go back to the studio to continue class at 6:30 PM. This will be the only evening of open studio.

Day 4: Class/Entertainment

 Afternoon: Class will resume at 1:15 PM and continue until 4:30 PM.
 Dinner: Served in Lakeview dining hall from 5:00 PM - 6:00 PM.
 Evening: We will be having entertainment which will begin at 7:00 PM.

Day 5: Class/Open Studio

 Lunch: Served in Lakeview dining hall from 12:00 PM - 1:00 PM.
 Afternoon: Class will resume at 1:15 PM and continues until 4:30 PM.
 Dinner: We will be having our banquet served in Lakeview dining hall from 5:30 PM - 6:30 PM. Afterward we will do a "walk through the classrooms" to see what all the different classes completed during the week.
 Evening: Starting at 6:30 PM we will walk through each classroom to see what all the participants accomplished during the week.

Day 6: Class

 Lunch: Lunch is served in Lakeview dining hall from 11:30 AM - 12:30 PM. The program ends after lunch.
