Based in the seaside village of St. Martins on the Bay of Fundy, explore how two beautiful coastal areas of New Brunswick were settled by very different peoples — Acadians on the north shore and British Loyalists on the south. Witness the dramatic Bay of Fundy tides, walking with a naturalist on the ocean floor out to sea caves. Spend two nights in the French town of Bouctouche, where history comes alive with vibrant music, food, theater and dance. Return to the Bay of Fundy and St. Martins to learn how British Loyalists built more than 500 great wooden sailing ships and launched them worldwide.

The serene Village of St. Martins on the Bay of Fundy is nestled on miles of unspoiled beaches. The highest tides in the world sweep in and out each day carving sea stacks and caves into the rugged red cliffs that surround the village. As the gateway community to the spectacular Fundy Trail, the village provides easy access to a range of walking, hiking and biking trails.

In St Martins turn right onto Main St at the XTR gas station, continue down Main Street and you will see the Tidal Watch's treelined driveway and parking lot on your right, about 3 driveways past the Rite Stop gas station.

Day 2: British Loyalists and Shipbuilders and the Highest Tides in the World
(Monday, June 24)
   
 Breakfast: Includes cold buffet & hot entree each day
 Morning: At the Quaco Museum in St. Martins learn about legacy of British Loyalists and Shipbuilders and how more than 500 sailing ships were built launched on the giant tides of the Bay of Fundy.
 Lunch: Lunch at the Inn
 Afternoon: In a lecture on the beach and in the classroom learn the science of the highest tides in the world, how they have shaped the coastline and the life of people around the Bay over the centuries.
 Dinner: Full service candlelight dinner
 Evening: The evening concert highlights the Celtic influences of the early settlers.

Day 3: Acadian Museum, Bouctouche and Le Pays de la Sagouine.
(Tuesday, June 25)
   
 Breakfast: At the inn, includes cold buffet & hot entree
 Morning: Enroute to Bouctouchel stop in Moncton at the Acadian Museum on the campus of University of Moncton. Guided exploration of the world's oldest Acadian Museum, founded in 1886.
 Lunch: Arrive in Bouctouche at Le Pays de la Sagouine. Enjoy a hearty Acadian lunch at the Village.
 Afternoon: Experience the French joie de vivre in music, food, comedy, theatre and dance at the Acadian Village, Le Pays de la Sagouine. Created from the imagination of internationally renowned Acadian novelist, playwright and author Antonine Maillet, Le Pays is the island where the Acadians celebrate.
 Dinner: Enjoy a fresh seafood dinner and more Acadian fare in the town of Bouctouche.

Day 4: Experience the beauty of the Bouctouche coast and sand dunes.
(Wednesday, June 26)
   
 Breakfast: Continental breakfast buffet at Auberge Boutouche
 Morning: Experience the beauty of the Bouctouche sand dunes, the few remaining sand dunes on the northeastern coastline of North America. Led by the park's naturalist guide explore the dunes wilderness along a boardwalk from which this unique ecosystem can be viewed.
 Lunch: Enjoy a picnic lunch overlooking Bouctouche Bay.
 Afternoon: Continued exploration of Bouctouche Dunes and then a stop at La Ferme Maury (Les Vins de l'Acadie) to learn about New Brunswick's first co-operative cottage winery. Sample an enticing selection of natural fruit wines. Finish the day in Shediac at a Provincial Heritage Place, a museum and art gallery dedicated to the life and work of Pascal Poirier (1852-1933), a Shediac native, author, patriot and first Acadian senator. The gallery features a fine collection of works by local artists such as paintings, glasswork, pottery and so much more.
 Dinner: Dinner on your own at one of Shediac's or Bouctouche's fine restaurants.

Day 5: Hopewell Rocks & Fundy National Park
(Thursday, June 27)
   
 Breakfast: Continental breakfast buffet at Auberge Boutouche
 Morning: Depart the eastern shores of New Brunswick traveling back to the Bay of Fundy to arrive at Hopewell Rocks. Walk the ocean floor, tides permitting, to explore the distinctive sandstone formations topped with trees carved from sea cliffs.
 Lunch: Lunch on your own at the Hopewell Rocks Restaurant overlooking the Bay.
 Afternoon: Continued exploration at Hopewell Cape. Depart in afternoon to travel through Fundy National Park to St. Martins.
 Dinner: Full service dinner at Tidal Watch Inn

Day 6: Village of St. Martins Sea Caves & Tidal Harbour
(Friday, June 28)
   
 Breakfast: Cold breakfast buffet and hot entree each morning.
 Morning: Experience the Bay of Fundy Tides once again in a walk through the Village of St. Martins, past the tidal harbour where boats sit in the mud at low tide. Walk the ocean floor once again out to sea caves carved by waves and tides into red sea cliffs.
 Lunch: Lunch on your own at one of the beach restaurants overlooking the caves.
 Afternoon: Continued exploration of the sea caves and cliffs on the Bay of Fundy
 Dinner: Full service farewell dinner at the Tidal Watch Inn.
