Since ancient Puebloans first cultivated beans, corn and squash in the deserts of the Southwest, this cuisine has nourished and delighted countless generations. Beginning in Santa Fe, regional cuisine that had remained hidden from the rest of the world for generations arrived on national tables. Today Southwestern fare is an integral part of American cuisine. Learn how some restaurants in Santa Fe have preserved traditional styles of food preparation while others have become more creative. Attend New Mexican cooking classes, sample dishes both traditional and contemporary, and return home ready to dazzle your friends with a Santa Fe style feast.

Santa Fe

A cosmopolitan city famous for its world-renowned opera, chamber and choral music and for its art and artists, Santa Fe is situated at the base of the Sangre de Cristo Mountains. Nearby, eight historic, continuously occupied pueblos and small Hispanic villages divulge a heritage that is impeccably preserved in this multi-cultural state capital.

Thomas Gallegos
Tom Gallegos is a native of Taos who works to promote the culture of northern New Mexico communities and pueblos. He has been involved with Road Scholar’s learning adventures since 1986. Tom’s volunteer activities include restoration of the Santa Fe River and preservation of the Barrio Analco neighborhood of Santa Fe. He is an adjunct instructor with the New Mexico Highlands University and holds master’s degrees from Arizona State University and the University of Kansas.
 
James Hammond
Jim Hammond has searched the world for the best wines for 40 years. Known as the Southwestern Wine Guy, Jim has been the wine columnist for the Albuquerque Journal since 2006. His book, "Wines of Enchantment, A Guide to Finding and Enjoying the Wines of New Mexico," is the first of a planned series. Jim’s first novel, "The Phoenix Society," is set in the wine country of Sonoma County, and he is working on a novel covering the Lincoln County Wars of New Mexico set in the late 1870s.
 
Shirley Nelson
Wine educator Shirley Nelson shares her enthusiasm for New Mexico’s vineyards through her writing and wine appreciation classes. The Southwest editor for an Internet magazine, she also contributes to two local publications, as well as to the Hugh Johnson's wine reference books. Shirley has served in roles as a wine consultant, wine judge, and board member of the New Mexico Chapter of the American Institute of Wine and Food. She is the secretary for the New Mexico Vine and Wine Society.
 
David Sundberg
Born and raised in Missouri, David Sundberg graduated from the School of Hotel and Restaurant Management at the University of Missouri – Columbia. He has worked extensively as a chef throughout the U.S., Mexico and Europe, while cultivating his passion for food and food history. David recently relocated to Santa Fe from R.I., where he wrote for local publications, taught cooking classes, and worked for numerous restaurants and caterers. He is a fervent supporter of local growers and producers.

  Description: This full-service hotel is one and one-quarter mile from the historic downtown Plaza and within an easy walk of a large mall with drugstore and grocery store. There is a shuttle that travels back and forth to the downtown area from 9:00 am to 9:00 pm. The hotel sits on a hill overlooking Santa Fe with great views and many amenities and it is a non-smoking facility. It features Santa Fe-style decor and furnishings, and the staff is friendly and very accommodating.

From Santa Fe to Albuquerque Airport (Sunport), let shuttle service know which hotel you'll need to be picked up at in Santa Fe and when you'll be returning to Albuquerque.
 
Driving Directions
  Driving North from Albuquerque Take I-25 north from Albuquerque approximately 56 miles to Santa Fe. Take the St. Francis Drive Exit #282 and go left under the overpass. Merge on St. Francis Drive heading north. Go 5 miles through Santa Fe to the stoplight at Alamo Drive and turn left. Take an immediate right onto Calle Mejia. The LODGE AT SANTA FE is on the top of the hill. If using a GPS device, use the address 744 Calle Mejia, Santa Fe, NM 87501
  Driving South from Taos or Espanola Take US 285 / US 284 South toward Santa Fe. Follow signs to St. Francis Drive and stay to the right. You will pass the hotel on the right as you come down the hill into Santa Fe. Turn right at the light at Alamo Drive. Take an immediate right on Calle Mejia. THE LODGE AT SANTA FE is on the left at the top of the hill. If using a GPS device, use the address 744 Calle Mejia, Santa Fe, NM 87501.

Day 1: Arrival, Check-In, Orientation
(Sunday, August 4)
   
 Arrive To: Arrive in Santa Fe. Check into hotel any time after 4:00 PM, then register with program's group leader between 4:00 and 5:30 PM in designated area at the hotel.
 Dinner: Dinner at the hotel
 Evening: Orientation and introductions in hotel meeting room from 7:00 - 8:30 PM

Day 2: Santa Fe School of Cooking Class; Guided Walking Exploration; State Capitol Visit; Dinner at Selected Restaurant
(Monday, August 5)

Note: Some standing during cooking class; walking up to several blocks
   
 Breakfast: Breakfast at the hotel
 Morning: Historical overview of people of New Mexico - learn what they ate and how they grew it.

Then, you'll be transported to the Santa Fe School of Cooking, where you'll start your Southwest cooking adventure with a demonstration brunch preparation that combines the richness of local products and traditions.

You'll experience Chilaquiles with Chicken and Green Chile, Tomatillo Sauce, New Mexican Egg Frittata, Chile-glazed Bacon (to DIE for!), Piloncillo Baked Apples with Cajeta Sauce, and a Fruit Liquado.

 Brunch: Enjoy a brunch featuring the foods prepared at the Cooking School.
 Afternoon: Participate in a guided walking and bus exploration of downtown Santa Fe, including a visit to the Roundhouse, New Mexico's capitol building, which has a wonderful collection of art works representing some of the state's most famous artists.

Return to the hotel for a brief rest.

 Dinner: If it seems like all you do is eat, you're right!

Dinner will be at La Choza restaurant, a local favorite that serves traditional New Mexican cuisine.

 Evening: Bus returns to the hotel at 8:00 PM.

Day 3: Santa Fe Farmer's Market at Railyard Park; Santa Fe School of Cooking's Hands-On "Chile Amor" class
(Tuesday, August 6)

 Breakfast: Breakfast at the hotel
 Morning: Bus departs at 8:30 AM for a visit to the Santa Fe's Farmers' Market.

Located in the new Santa Fe Railyard Park, the market features fresh greens in season, sprouts, herbs, eggs, cheeses, baked goods, teas, dried chile, original crafts, body care products and more.

With over 100 small growers participating, the Santa Fe Farmers' Market is the largest in New Mexico and one of the best known in the country.

After visiting the Market, you'll have some free time to explore the Railyard Park and other parts of Guadalupe Street (galleries, shops, more) on your own.

 Lunch: Lunch on your own in the Railyard Park area. There are a number of restaurants serving a variety of cuisines (Indian, Italian, El Salvadoran, barbecue, New Mexican, and more) within easy walking distance.
 Afternoon: At 1:45 PM, meet at the Santa Fe School of Cooking for their hands-on "Chile Amor" class.

This experience will delight you if you're familiar with New Mexico's official "state vegetable," and will "light the fires" for those yet uninitiated.

You'll explore chile's unique culinary and medicinal qualities, learn about the different varieties, don aprons and prepare red and green chile sauces and homemade tortillas to taste.

The rest of the afternoon is free.

 Dinner: Dinner is on your own tonight. We'll provide a brochure with lots of options for your dining pleasure and information about evening activities around town.
 Evening: Free evening tonight to enjoy Santa Fe nightlife or to rest

Day 4: Traditional New Mexican Foods Cooking Class; Winery Visit and Tasting; Organic Farm Visit; Dinner at Rancho de Chimayó
(Wednesday, August 7)

Note: Some standing at Cooking School; walking over paved and unpaved terrain at winery and farm visits
   
 Breakfast: Breakfast at the hotel
 Morning: Bus departs at 8:45 AM for another hands-on class at the Santa Fe School of Cooking. This morning, you'll learn how to prepare some traditional New Mexican foods.
 Lunch: Lunch will be at the Cooking School, where you'll dine on the traditional New Mexican foods you've prepared.
 Afternoon: After lunch, depart for a field trip to Estrella del Norte Vineyard, where you'll taste some of their own wines, as well as those from other New Mexico vineyards.

You'll then go to Santa Cruz Farm, where you'll walk around the farm and learn about farming and vegetarian lifestyles of the area, and the Santa Fe Farmers' Market with Santa Cruz Farm owner, Don Bustos.

Much of Mr. Bustos' produce is used at the Santa Fe School of Cooking.

Later, the bus will depart for Chimayó, New Mexico, a charming little town that retains many of its old-world traditions.

 Dinner: Dine at historic Rancho de Chimayó Restaurante.

This is one of northern New Mexico's oldest and best-loved dining spots.

Dinner will start with salsa and chips. You'll have several entree choices and a dessert.

 Evening: Bus arrives back in Santa Fe at about 7:00 PM

Day 5: Contemporary New Mexican Food Class; New Mexico's Wines and Wineries Class; Free Afternoon; Dinner at Santacafe
(Thursday, August 8)
   
 Breakfast: Breakfast at the hotel
 Morning: Meet in hotel classroom for a discussion on Contemporary New Mexican foods.

Then, meet one of New Mexico's best-known wine critics and educators, who will talk about our state's terrific wines and wineries.

You'll learn what comes from which wineries, and you'll get to taste several of the best wines.

 Lunch: Lunch at the hotel
 Afternoon: FREE AFTERNOON
 Dinner: Meet for dinner from 6:00 - 8:00 PM at the well-known contemporary restaurant, Santacafe, in the downtown area.

You'll have a choice of several beautifully-prepared main courses, an appetizer or salad, and a specially selected dessert.

 Evening: Return via bus to the hotel for program closing in a hotel meeting room.
