Explore the famed and elegant Culinary Institute of America located in a picturesque former Jesuit seminary overlooking the river. While there, enjoy a sumptuous meal prepared under the tutelage of world class chefs. Farms and farmers markets are a huge part of the Hudson Valley’s Landscape. There will be a cooking class emphasizing local produce and taught by a CIA graduate. We will also learn about making cheese and visit a local brewery, cruise the resplendent Hudson, and enjoy the beautiful scenery.

Newburgh

The Hudson River Valley, just north of New York City, harbors quaint villages and historic sites, such as the Roosevelt homes in Hyde Park and Val-Kill. The area also hosts numerous art museums and concert venues.
Accommodations
Modern college campus suites with private baths, air-conditioning and breathtaking views of the Hudson River. Breakfast is served in the dormitory with other meals in the dining hall, a short walk from the dorm.

George Burke
George Burke has been hosting Mount Saint Mary College's Road Scholar program for 14 years, and has served as an adjunct instructor of history and communication at the college since 1990. A favorite of Road Scholar participants, George has been repeatedly complimented for his knowledge of the area and his humor.

  Description: Our lovely campus has a beautiful view of the Hudson River. We are located in historic Newburgh, home to Washington's Revolutionary War Headquarters and closeby to West Point, Hyde Park, and many other attractions. The campus features a modern library and a gym/recreation complex which is shared with other programs and available on a limited basis.

  Room amenities: The dorm rooms will be clean and comfortable. Each room has a refrigerator and microwave. However, Participant may want to bring their own alarm clock, radio, reading lamp, hair dryer .... to make their stay more comfortable.
  Facility amenities: Our secure modern, air conditioned campus suites all have private baths. The breathtaking views of the Hudson River are truly the best in Newburgh and campus is just minutes away from a Hudson River walk. Breakfast served in the lobby of our accommodations; all other meals in campus dining facility a short walk from your suite.

  Bathroom: Sakac Hall rooms are a typical suite set-up. Each bedroom has its own bath but the bathroom door is 3' adjacent to the bedroom door and one must step into shared area (not hallway) to go into the bathroom.

Driving Directions
  From points East Take I-84 west to second Newburgh exit, 10S. Bear sharply right on exit ramp and go 1/4 mile to traffic light at intersection of Rt. 9W and Rt. 32. Turn right onto Rt. 9W south. At second light (Sunoco gas station is on the left), turn left onto North Plank Road, which becomes North St. Turn right at next traffic light onto Powell Avenue; the Mount is 1/4 mile on left.
  From points North or South Take the New York State Thruway to Newburgh exit 17. Go through tollbooth, bear right and follow signs for I-84. Take I-84 east to Newburgh exit 10. At the bottom of exit ramp, turn right onto Rt. 9W south. At first light (Sunoco gas station is on the left) turn left onto North Plank Road, which becomes North St. Turn right at next traffic light onto Powell Avenue; the Mount is 1/4 mile on left.

Daily Schedule

Day 1: Registration/Welcome/Orientation
(Sunday, June 23)

Note: Welcome! following a tour of our lovely campus you will enjoy a welcome dinner followed by an orientation and schedule review.
   
 Afternoon: Our registration hours are from 2-4 p.m. Welcome to Mount Saint Mary College! We will take you on a walking tour of the lovely Mount campus en route to a welcome dinner.
 Dinner: We are glad to have you join us and serve a nice welcome dinner to greet you.
 Evening: Welcome and Orientation. We will go over the schedule for the week to come. Usually a film is shown tonight.

Day 2: Farm to learn about cheesemaking!
(Monday, June 24)

Note: We will visit a local goat farm to learn about their cheesemaking operation and sample some of their fine product.
   
 Breakfast: Breakfast is from 7:30 - 8:30 a.m. and served in the dorm.
 Morning: We will visit a farm and learn about cheese making onsite.
 Lunch: Lunch.
 Dinner: Tonight you will enjoy an interactive cooking class emphasizing local produce and some cheeses from the farm and taught by a Culinary graduate. Dinner will be delicious!
 Evening: View a "foodie" film.

Day 3: The world renowned Culinary Institute!
(Tuesday, June 25)

Note: Visiting the Culinary Institute in Hyde Park is a fantastic experience! We will take a tour of the facility, enjoy the views of the Hudson from the campus, but, most important eat and savor some amazing food served by students nearing graduation in the beautiful Caterina de' Medici restaurant.
   
 Breakfast: Breakfast is from 7:30 - 8:30 a.m. and served in the dorm.
 Morning: This morning we will head to the Culinary and begin with a tour. For more than six decades, The Culinary Institute of America has been setting the standard for excellence in professional culinary education. More than 44,000 alumni serving their professions are living testament to the quality of a CIA education. The CIA is in a former Jesuit seminary, St. Andrew-on-Hudson in Hyde Park. The college purchased the five-story, 150 room building situated on 80 acres of land overlooking the Hudson River, in 1970 for $1 million. Two years and $4 million in renovations later, the new school opened, with its main building renamed Roth Hall. The CIA is the recognized leader in culinary education for undergraduate students, food service and hospitality professionals, and food enthusiasts.
 Lunch: Luncheon at the Culinary Institute! An experience you will always remember. (Code is dressy casual - please no jeans!) No matter which restaurant we eat in you are in for a wonderful time. The wait staff are students normally due to graduate in just a few weeks. It's enjoyable to learn about what they majored in, enjoyed the most about their educational experience, and where they are headed to work following graduation.
 Afternoon: Local breweries are extremely popular and we will visit the Newburgh Brewing Co to tour and taste a bit.
 Dinner: Dinner is from 5:30 - 6:30 p.m.
 Evening: A local farmer will lecture about the Historical Perspective of Food in the Hudson Valley. Steve Clarke is a sixth-generation grower of cherries, peaches, nectarines, apricots, apples, pears, and plums. In the mid-Hudson valley, fruit, nut, and berry crops account for more than $45 million in revenue. The health of the farms is a key component in efforts to conserve open space. For local families, the farms are a source for healthy, locally grown apples, pears, plums, and other fruits.

Day 4: Cruise the spectacular Hudson River! Special Lecture tonight!
(Wednesday, June 26)

Note: You've been enjoying it from the dorms all week now enjoy the cruise on the "River that Flows Both Ways".
   
 Breakfast: Breakfast is from 7:30 - 8:30 a.m. and served in the dorm.
 Morning: There will be a special lecture this morning.
 Lunch: Lunch will be served. We are planning to eat down on the river at one of the local restaurants with a view that cannot be beat!
 Afternoon: We will cruise the spectacular Hudson River. The Hudson River is a 315 mile watercourse that flows from north to south. It begins at Lake Tear of the Clouds in the Adirondack Mountains, flows past the state capital at Albany, and eventually forms the boundary between New York City and New Jersey. Because its current changes four times every day as ocean tides pulse upriver to the Troy dam. It is also called the "river that flows both ways." The river is named after Henry Hudson who explored it in 1690.
 Dinner: Dinner is from 5:30-6:30 p.m.
 Evening: Tonight : a special lecture is planned.

Day 5: Free time to enjoy the valley on your own. Tea-time in the afternoon!
(Thursday, June 27)

Note: The beautiful Buttermilk Falls Inn will be the site we visit to enjoy a lecture by the chef and view a pastry demonstration which we will enjoy with tea!
   
 Breakfast: Breakfast is from 7:30 - 8:30 a.m.
 Morning: Enjoy a morning of free time!
 Lunch: Lunch will be served.
 Afternoon: This afternoon we will visit the beautiful Buttermilk Inn & Spa. We will enjoy afternoon tea an learn how running an inn has changed over the years. Buttermilk Falls is a 75 acre estate with a circa 1764 building and beautiful views of the Hudson River.
 Dinner: Dinner is from 5:30 - 6:30 p.m.
 Evening: Farewell Party.

Day 6: A documentary will be shown to wrap up the week!

 Breakfast: Breakfast is from 7:30 - 8:30 a.m.
 Morning: Watch the Gefilte Fish Chronicles! Much of this documentary revolves around the family as they lived in Newburgh! An enjoyable end to our "foodie" week!
 Lunch: Lunch is from Noon - 1 p.m. Departure is 1 p.m.
 Afternoon: Departure is promptly at 1:00 p.m.

  Newburgh Mount Saint Mary College
The Mount campus is accessible by car, train (Metro North Railroad from Grand Central Station / Beacon station), and bus (Newburgh Shortline Station). A car rental is suggested as the best way to fulfill sightseeing needs during free time. Each participant's folder will have a list of directions from the Mount to the site. Examples would be to West Point, FDR's home in Hyde Park, Washington's Headquarters, Vanderbilt Mansion, and more. If what you're looking for is not on the list we will happily supply directions!
