Roll up your sleeves and get cooking: You’re about to learn from Vermont’s culinary pros how the food we eat can be elevated from simple nourishment to an exercise in fun, fascination and feeling good about your health and the planet. Sessions of hands-on instruction in a teaching kitchen will give you the tools you need to make healthy meals from quality ingredients. With agro-ecologists from the University of Vermont, study the farm-to-table movement and how selecting the right produce can improve your health and that of the earth. Your culinary education includes insight into the art of wine selection and pairing, complete with a parallel tasting of both reds and whites.


• Visit the commercial kitchen of your exceptional lodgings — billed as “Vermont’s Culinary Resort” — to learn how the staff execute big banquet services.
• Under the watchful eye of your chef-instructors, aid in the creation of the delicious meals you eat each day and take part in an Iron Chef-style competition to show off what you’ve learned.
• Hear from local experts about how to select and grow items for a delicious kitchen garden, and study the ecology and geological evolution of the Lake Champlain Valley.
