Build a full-size, clay bread oven and unlock the baking secrets to the best sourdough, artisan and traditional breads you’ll ever eat. Amid the beauty of coastal Maine during the fall, master a variety of methods for creating delectable bread dough and learn how to capture the yeasts unique to your own environment. Field trips explore the region’s rich heritage and enhance your culinary studies with visits to an organic farm, a 150-acre blueberry farm and a local lobsterman.

• Take part in the hands-on construction of a full-size Quebec clay oven with an experienced craftsman.
• Knead the dough as you work through recipes, capture wild yeast and perfect bread baking techniques.
• Enjoy local interaction with the extraordinary places and people of Down East Maine and explore FDR's "summer cottage,” Campobello Island and the easternmost lighthouse in the continental U.S.
