If you like Cajun food, then by all means take this program. You will learn a lot and enjoy the process. And you will also get to see some of the area around and in Lafayette.

Had a wonderful time. Patti is a great group leader who really loves this work. Last minute change when chef cancelled was perfect and showed how creative Patti is. We cooked 3 mornings and took food tour 4th day. The other activities were great but to me the swamp tour was really the best. Met a bunch of really nice people.

What a great experience in learning about the Cajun culture along with preparing some of their foods first hand. I would recommend this program to anyone who in interested in the Cajun culture.

Excellent program. Cooking 4 mornings 9-1 with 4 different Cajun Chef's. Good educational movie's, lecture and field trips. Would reccomend to anyone who is interested in cooking Cajun and learning the history of the area. Also a different Cajun Resturant every night. Gives you the full experience.

This is a nice introduction to all things Cajun. We did some field trips to see local color such as a pontoon boat out in the swamp with a boat captain who was a real Cajun, accent and all. The performance at the Martin Accordion factory is truly a delight and of course the cooking every day is an over the top way to learn how to cook Cajun. We cooked meals each day that had individual parts I would consider a standalone entree and yet there were several other dishes to go with the meal, each of which could be a meal. The net result is learning to cook at least 10 meals for only 5 lunches. Wow. After this we managed to go out to a very nice local Cajun restaurant each night.
