This was my first Road Scholar experience and the people (staff and participants) were terrific, the accommodations were fantastic and the program was incredible. Jan, our coordinator, is friendly and bent over backwards to make every one comfortable. We arrived two hours early and Jan was already prepared with our name tags and other info and our “cabin” was already waiting for us. About the cabins: these are not bare bones rustic cabins; our cabin had a beautiful common area living room, a fully appointed kitchen, a spectacular sunrise view and the bedrooms had two queen beds and their own bathrooms. Our Pit Master instructor, JT, was THE BEST! JT’s lectures not only how to barbecue, but the history of the region and the four sauces, how the heat affected the sauces, the pros and cons of the types of smokers and also the different types of brisket and rib cuts. I was very pleased also that JT continually focused on food safety and proper food handling techniques. Like the meats we prepared, all of JT’s lectures were juicy and flavorful and a very pleasant and fun experience. To keep in practice, we prepared barbecued chicken, baked beans, red cabbage and apple slaw, and biscuits for friends and family for the Easter holiday and they loved it (not a chicken, baked bean or piece of slaw remained). We are ordering a Lang Reverse Smoker because family & friends want more (and so do we). So, if you are a “foodie” and want to learn about barbecuing this is the course for you! If you take away nothing else you will take away three things: (1) cook low and slow, (2) what you start with is what you end with, and, my personal favorite, (3) fat is where it’s at! We love you Jan! We love you JT!

What a wonderful experience in a wonderful place with fun people! As my first Road Scholar program this experience really set a high standard. The accommodations were called cottages but a hotel chain might call them “villas” – every couple had their own large bedroom with full bath, the gathering room was large and included a fully equipped kitchen and full-sized washer and dryer, and the front and rear porches were examples of low country homes in the area. Situated on South Carolina’s Broad River all units were on the water. Our “professor”, J.T. Handy, exceeded all expectations with his engaging style and in-depth knowledge of all aspects of barbecue cooking. Lectures were combined with hands-on experience using his competition quality barbecue pits. There was always time for a question and his special sense of humor had us all laughing. But the objective of the course was to learn how to cook and this was met and exceeded in all aspects. We really enjoyed the products of our efforts from the beer-can chicken cooked for four hours to the ribs, pulled pork and brisket. We also prepared side dishes to go with the BBQ which were excellent as well. Other meals prepared by the staff were excellent and who could forget the freshly baked “brie-bread”? Our course leader, Jan, was a delight as she rushed around the site taking care of every little detail. This was a very well organized session and we all felt Jan was a major reason for the success of the program. Each person in the group could participate in the hands-on cooking activities to the degree desired – there was no pressure. As a group we all worked hard to make the most of our time and I believe we all would love to see an advanced version of this course because we think J.T Handy has much more to teach us. We are planning our first “at-home” trial of our new skills in the coming week as our friends all want to taste the best of South Carolina barbecue.

This program exceeded my expectation. I had more fun than I expected. JT Handy is a very serious BBQ master with a flair for humorous anecdotes. He has a super fire starter to die for. I wanted to learn how to smoke on a gas grill, mission accomplished. As a food and sensory scientist in my former life I had some excellent discussions with JT and was delighted with his knowledge of flavor and texture delivery. Jan was an excellent coordinator. She mailed a binder with all the info beforehand and prepared a DVD with pictures as a nice keepsake. This was my first road scholar trip and I'm totally pleased. The people I met were interesting to talk to and learn from. Tom Abraham

If you want to learn the techniques of barbecue, then this is the class for you! Through hands-on experience, you will learn how to prepare the meat, cook the meat the "slow and low" way, and then to eat the meat. Although the four basic BBQ sauces are provided, the nuances of different spices and the recipes for rubs and sauces were covered only briefly. This is not a criticism --- the course was exactly what I needed! The instructor was great and the accommodations were excellent. However, the best part of the course will be the fantastic dinners that I will be preparing in the future!

This is a program not to be missed by any fan of BBQ. The instructors and coordinators are fantastic. The group was very cohesive and focused on our goal of preparing superb bbq.

If you love food and you love to cook and eat, especially barbecue, this is the program for you. JT(with his Mama and sister) is a master chef, teacher,pitmaster, humorist, and all-round great person. The accommodations were great - if you expect rustic camp cabins reminiscent of summer camps of your youth - forget it! The "cabins" are beautiful modern vacation homes with every amenity and large beautiful screened porches with rocking chairs and great ambiance. The food was great and we have been inspired to buy an electric smoker to make all the dishes we prepared at the school. The program providers were helpful and ran a great program. What a great time!

I was worried whether my wife would enjoy this class -- she loved it!!! All our expectations and hopes were met and exceeded. JT (Tim), our instructor is A1 -- he knows how to teach a class and keep it interesting. His knowledge and cooking is the stuff legends are made of. It was great eating what we made, and that included the all the side dishes. I feel so much more comfortable BBQing now, the knowledge we gained is phenomenal
Jan, the kitchen crew, and all involved were great folks, always helpful and friendly. Palm Key is a special place, the accommodations are great. This was our first Road Scholar experience. We will do more and we hope they will all be as good as this one. It has our highest recommendation.

Sunday to Friday went so fast because the content of this program was so interesting and delicious. JT Handy, our instruction, is definitely the BBQ King. Learning about the different sauces for the BBQ was very interesting and it was great to be able to taste them all. All 3 meals, Chicken, Ribs, and Pork Butt were fabulous. There were many techniques to cooking all 3 types of meats that we did not know before. We highly recommend this class. JT is more than accomodating to offer what foods to have with your BBQ and the recipes. We made the baked beans last night and I must say they were delicious. Thank you JT.

We signed up for this class to learn more about how to barbecue pork shoulders, and over the week's time in class, our expectations were met and more. We didn't expect to learn tips about how to make the cooking experience easy and have fun doing it. JT, our instructor, was knowledgable in the areas of chicken, baby back and spare ribs, brisket, and pulled pork. He showed us easy steps to prepare the meat, made suggestions for rubs and sauces, discussed direct and indirect heat cooking. He told us about different woods to use and how the woods compliment different meats. We learned about some equipment that is necessary and other equipment that is nice to have but not required. We learned how to season a new smoker and how to find the hot and not so hot spots by baking biscuits. Throughout the week, JT had an easy manner and interjected humor to make the class light hearted and fun. But JT is an expert in his craft, and he is an excellent instructor. It is my hope that an advanced class will be offered, and if it is, I will certainly sign up for it.

I have seldom had an instructor who was as pasoniate about his topic and as knowledgeable. I wanted more!! Time slipped away too quickly in a week.

The instructor, JT Handy said he would try to get an additional class covering, Whole Hog, Stews, Appetizers, Carolina Hash and other topics together for Road Scholar to offer, I will sign up ASAP! He suggested a field trip to the maker of his smoker (about 40 miles away) but this may be a problem for Road Scholar, so as a suggestion, make it voluntary for the scholars, who would use their Free Time to go in their own cars!
