Begin in the nursery and follow the beans starting with their growing cycle through careful collection and selection of the finest beans. Learn how Costa Rica's unique climate and diverse landscapes provide the perfect growing conditions for gourmet coffee beans. Next you will be enchanted by the aromas of the roastery where you will discover how different roasting techniques affect the beans and the brew. Next, learn how experts "break the cup" by using techniques to taste or "cup" coffee to identify and grade characteristics that qualify a gourmet cofee.

Day Four: Tuesday, December 02 - Transit the Panama Canal
Breakfast: At leisure on board in the Crystal Dining Room (open seating) or the more casual Lido Café. Room Service is also available 24 hours a day.

Morning: Full transit through the Panama Canal, with onboard commentary provided by a Panamanian canal pilot. One of the largest and most difficult engineering projects ever undertaken, the canal had an enormous impact on shipping between the Atlantic and Pacific Oceans, replacing the long and treacherous route via the Drake Passage and Cape Horn at the southernmost tip of South America. A ship sailing from New York to San Francisco via the canal travels 5,900 mi. well under half the 14,000 mi. route around Cape Horn. The concept of a canal near Panama dates to the early 16th century. The first attempt to construct a canal began in 1880 under French leadership, but was abandoned after 21,900 workers died, largely from disease (particularly malaria and yellow fever) and landslides. The United States launched a second effort, incurring a further 5,600 deaths but succeeding in opening the canal in 1914.

Lunch: At leisure on board the ship in the Crystal Dining Room, the Lido Café, or the Trident Grill, or you may choose to eat independently ashore. Some Crystal shore excursions will include lunch (depending on the length).

Day Five: Wednesday, December 03 - Puerto Limon, Costa Rica
Note: Today's visit to the Sloth Sanctuary and Playa Bonita is an exclusve Road Scholar field trip. Please do not book an independent Crystal shore excursion today.

Breakfast: At leisure on board in the Crystal Dining Room (open seating) or the more casual Lido Café. Room Service is also available 24 hours a day.

Morning: ROAD SCHOLAR EXCLUSIVE: Disembark the ship and travel approximately 60 minutes along the Caribbean Coast to the Sloth Sanctuary "Aviarios del Caribe". Aviarios is a privately owned and operated Wildlife Sanctuary protecting an area of approximately 120 acres, which includes the delta of the Estrella River, a true paradise for bird watchers and nature lovers. Well hidden in the treetops, like a small ball of fur, it is almost impossible to recognize this amazing creature. Sloths are inhabitants of the rainforest that are rarely seen down on the ground. This tour will enable guests to visit a sanctuary dedicated to the rescue and re-introduction of these animals back into nature, we will meet some of the baby sloths in the nursery and the adult permanent residents. Visitors will also see their habitat by means of small engineless paddle canoes, among the most commonly seen inhabitants are aquatic birds, monkeys, river otters, caimans, and sloths. A naturalist guide will help you to spot wildlife in the dense foliage in the well-kept trails of the property.

Lunch: After visiting the sanctuary, you will continue to Playa Bonita where you can enjoy a Caribbean lunch on the beach.

Afternoon: The Caribbean coast of Costa Rica is known for having some of the most beautiful beaches in the world. After lunch you will have some free time at the beach before returning to the ship.

Morning: INDEPENDENT EXPLORATION: While you wouldn't necessarily associate a Central American city with Victorian architecture, Belize City indeed offers some striking examples. Several Victorian mansions have been restored and converted into inns, museums, galleries and restaurants. Other structures in the city range from British Colonial to the oldest Anglican cathedral in Central America, St. John's Cathedral. The appeal of Belize's buildings extends to their interiors. The Marine Terminal, for instance, is a beautifully refurbished former fire station dating to 1923. Inside are two museums-the Coastal Zone Museum with displays highlighting the local reef ecology, and the Maritime Museum with a collection of paraphernalia centering on Belize's seafaring history. Finally, and not insignificantly, is Central America's remarkable wildlife, which Belize has made a point of preserving. A short distance from the city is the Belize Zoo, which is actually more of a wildlife preserve. Its exotic species live happily in roomy, natural-looking accommodations with dense vegetation. Keep the camera ready for jaguars, as they spend much of their time hunkered down in the shade, slinking out into the open for only a momentary stretch.

Morning: INDEPENDENT EXPLORATION: In the past, Key West was the winter home of Ernest Hemingway, John James Audubon and President Truman. Today it is a stylish retreat for writers and artists. Its atmosphere is reminiscent of the Caribbean, yet it is the southernmost town of the continental United States. Take a stroll along Duval Street, from the Atlantic Ocean to the Gulf of Mexico, or explore its interesting art galleries and boutiques.

Lunch: At leisure on board the ship in the Crystal Dining Room, the Lido Café, or the Trident Grill, or you may choose to eat independently ashore. Some Crystal shore excursions will include lunch (depending on the length).

Afternoon: Continue your exploration of Key West based on independent shore excursion selected

Dinner: Join your study leader for a group dinner in the Crystal Dining Room.

Morning: Ship Arrives in Miami at 8:00 am. Transfer to airport for flights home. We do not recommend booking flights that depart before 12:00 noon.
