Day One: Monday, April 21 - Welcome and Orientation
Afternoon: We will meet promptly at 4:30 for the program orientation. We will go through the itinerary for the week, engage in a fun colloquial vocabulary/language exercise, and have a general Q&A session. Individuals will introduce themselves to the group. It's a lively beginning to the program that is not to be missed!

Dinner: Dinner will be at the hotel or local restaurant.

Day Two: Tuesday, April 22 - Cooking Class
Breakfast: Breakfast buffet in the hotel dining room.

Morning: We will have our first cooking class, usually at Hamilton Hall, a university facility, and instruction will be from a university instructor. The morning class includes instruction, lunch, and clean-up.

Lunch: Our lunch will be the meal we've created in class that day.

Afternoon: We'll see a documentary film, "Against the Tide: The Story of the Cajun People of Louisiana."

Dinner: Dinner at a local Cajun restaurant.

Day Three: Wednesday, April 23 - Cooking Class; Martin Accordions
Breakfast: Breakfast buffet in the hotel dining room.

Morning: More cooking in Cajun country!

Lunch: We will again dine on the meal we've created that day.

Afternoon: We will visit a couple of specialty food and meat markets to see where the locals shop and what they have to choose from. We will be treated to a boudin making demonstration, as well as a tasting. Boudin is a well-loved Cajun delicacy. There is a possibility that we will also be able to watch cracklins being made. Both of these local favorites are quite a taste treat!

Dinner: Local Cajun restaurant.

Afternoon: Weather permitting, we will take a boat ride through beautiful Lake Martin, which has picturesque swamps and fascinating wildlife.

Dinner: Dinner & Live Music: Our farewell dinner will be at a well known local restaurant/dance hall.

Day Six: Saturday, April 26 - Departure after breakfast, which is served from 6...

Acadian VillageMuseum of authentic Acadian homes. Located on the grounds of Acadian Village are eight authentic Acadian houses dating back to 1800. There is a recreation of a General Store that was the main gathering place for the community. Onsite is a replica of a Chapel, the floor of the Chapel was made with long leaf pine that is over 200 years old. The reproduction of the Blacksmith Shop was built with weather-beaten, aged cypress boards. The shop is complete with original tools used by the blacksmith years ago. Open Tuesday through Saturday 10 a.m. to 4 p.m. Closed for major holidays.

Lafayette Science Museum and PlanetariumThe Museum exists to encourage the discovery and understanding of the natural world, the universe, and the role of humans within them. University Art MuseumThe University Art Museum's Permanent Collection consists of more than 1,500 works of art, including paintings, prints, drawings, sculpture, and photographs. This collection represents 18th, 19th and 20th century Louisiana, as well as the United States, Europe and Japan.
