Quaco Museum/Celtic Influences On Food & Music/Preparation of Lobster and Scallops
Breakfast:
Includes cold buffet & hot entree each day
Morning:
The week begins at the Quaco Museum in a session conducted by the curator and local genealogist. Learn about the arrival of the Loyalists and the shipbuilding industry that at one time made St. Martins the second wealthiest community in the British Empire.

Afternoon:
After lunch a local lobster fisherman will talk about the challenges and joys of making a living on the Bay of Fundy to provide this rich, much sought after food. Later in the afternoon move into a demonstration workshop in which participants will learn several ways to prepare and serve lobster and scallops.

Evening:
The evening concert highlights the Celtic influences of the early settlers

Tides & Ecology of the Bay of Fundy/Smoked Salmon/Taste Of New Brunswick
Breakfast:
Breakfast Includes a cold buffet and hot entre each day
Morning:
In the morning walk with a naturalist guide through the village, past a tidal harbour where fishing boats sit in the mud at low tide. Learn about the ecology of the Bay and about the world's highest tides. Experience the rise and fall of the tides as you walk across the ocean floor at low tide out to sea caves carved into dramatic red sandstone cliffs. Please note that the timing of this session may be adjusted closer to the program date to work with tidal predictions.

Afternoon:
Be sure to save some room at lunchtime for an afternoon workshop that will involve some extensive sampling of smoked salmon, various spreads and other salmon products. Learn about how salmon is smoked and produced along New Brunswick’s Bay of Fundy coast. In the second workshop of the afternoon learn about such local favourite foods as fiddleheads, dulse and cranberries. Learn about New Brunswick's specialty wineries and their production of fruit wines from abundant cranberry bogs and blueberry fields. Sample a variety of different wines and liqueurs.

A foot tapping, hand clapping Celtic kitchen party in the evening provides a lively finish for the day.

This entire day is spent exploring the splendor of the Bay of Fundy. Travel along sea cliffs, back roads and secluded beaches. An outdoor workshop explores the elements of a gourmet picnic overlooking a tidal beach.

- Acadian Influences/Appetizer Workshop/Music Reception
Breakfast:
Breakfast includes a cold buffet and hot entree each day
Morning:
The morning begins with a light French style breakfast. The morning lecture explores the arrival, life and contributions of the early aboriginal and Acadian settlers in the area. Learn how the Acadians of the 1600's dyked and farmed the nearby tidal marshes before the English settlers arrived. The session is followed by a traditional Acadian Brunch.

The afternoon workshop hosted a chef features a demonstration on the preparation of sumptuous appetizers. Collect recipes and ideas for hosting your own food events for friends and family.
