Afternoon: Arrive, Check in and get acquainted. You will receive your arrival packet with a schedule that we will review during orientation at 4:30pm.

Evening: Informal reception - socialize and learn about Historic Rehoboth - its evolution from Methodist campground to one of our nation's lively playground!

The Delicious Eastern Shore, Tour of Seafood Market, Cooking Demonstration, Wine and Food Pairing, Free Evening

Breakfast: Hotel Dining

Morning: Lecture: Great discussion of indigenous foods (crabs, terrapin and more); learn lore, legend and influence of Atlantic Ocean and Chesapeake Bay on fisheries, watermen, and culinary traditions. Field Trip: You will travel to a local seafood market and learn about a variety of regional fish and seafood. The morning will include an interactive food and cooking demonstration.

Lunch: Lunch at restaurant associated with the seafood market.

Afternoon: Lecture: There are 6 main basic flavor profiles that you can experiment with to develop a great food and wine pairing. In this presentation you will learn the fundamental flavor profiles for food and wine pairing as well as the regional pairing example and why it works. Learn to match food and wine like a professional chef or sommelier.

Dinner: Enjoy a relaxed dinner with your group in the hotel banquet room.

Evening: Free Evening to enjoy our quaint seaside village.

Day Three: Wednesday, September 18 - College of Marine Studies/Trip to Eastern Shore o...
College of Marine Studies/Trip to Eastern Shore of Maryland/Entertainment by Local Band.

Breakfast: Hotel Dining

Morning: College of Marine Studies Tour. Explore cutting-edge ocean science at the University of Delaware’s Hugh R. Sharp Campus in Lewes, Del. The College of Earth, Ocean, and Environment (CEOE) housed there is offering guided tours of its world-class research facility. Knowledgeable docents lead the tours, which start with an introductory video about the many ways CEOE researchers are studying wind energy, invasive species, pollution and other important environmental topics. Campus Stories Exhibits explain marine environments such as the frigid, ice-covered seas of the Antarctic and the super-heated hydrothermal vents found more than a mile below the sea surface. Students also learn how scientists are working to address local issues, such as the impacts of land development on Delaware water quality and wildlife.

Lunch: Lunch at Local Restaurant

Afternoon: Tour and Tasting: Nassau Valley Vineyards is Delaware’s first and only award winning winery. The winery is nestled among verdant fields on a quiet country road. They produce a wide variety of wines from sweet to dry and white to red that will be part of the tasting. NVV boasts one of the most unique winery tours in North America. Its five gallery, self-guided museum chronicles everything from the incredible 8,000 year history of wine to how the vineyard grows in the modern day.

Dinner: Dinner at a Local Restaurant.

Evening: Be entertained by the well-known local band, "The Back Bay Strummers". The band was started in 1996 by four individuals who enjoyed playing the banjo and were interested in getting together to jam with each other. The group gradually grew in size and now includes other acoustical instruments including the guitar, mandolin, ukelele, accordion, and bass and consists of twenty-five members ranging in age from 40 to 92 years old.

Day Four: Thursday, September 19 - Visit Historic Milton with Brewery Tour
Breakfast: Hotel Dining

Morning: Field Trip: Guided tour of historic town of Milton, a quaint little Victorian shipbuilding and button manufacturing village, just minutes from the resort towns of Lewes and Rehoboth Beach on Delaware's Eastern Shore. With a population of only 1,657, Milton is a thriving community of small businesses and lovingly restored historic homes centered at the head of the Broadkill River which feeds into the Delaware Bay. This tour will be conducted by the Milton Historical Society.

Lunch: Delicious lunch at local Milton Restaurant. Enjoy looking at the historic photos that line the walls.

Afternoon: Tour of Dog Fish Head Brewery and Tasting. Dog Fish is one of the premier micro-breweries in the US and has been highlighted on national television shows. Tours typically swing through the brewhouse, the cellars and the bottling line, but remember, this is a working - and growing - brewery. Dogfish can accommodate wheelchairs, but access might be limited. There are stairs along the tour. Be sure to wear closed toe shoes for the tour.

Evening: Independent Dinner and free time.
