Day One: Monday, April 01 - Welcome and Orientation
Afternoon: We will meet promptly at 4:30 for the program orientation. We will go through the itinerary for the week, engage in a fun colloquial vocabulary/language exercise, and have a general Q&A session. Individuals will introduce themselves to the group. It's a lively beginning to the program that is not to be missed!

Dinner: Dinner will be at the hotel or a local restaurant.

Day Two: Tuesday, April 02 - Cooking Class
Breakfast:

Morning: We will have our first cooking class, usually at Hamilton Hall, a university facility, and instruction will be from a university instructor. The morning class includes instruction, lunch, and clean-up.

Lunch: Our lunch will be the meal we've created in class that day.

Afternoon: We'll see a documentary film, "Against the Tide: The Story of the Cajun People of Louisiana." In the late afternoon we'll enoy a jam session with local musicians.

Dinner: Dinner at a local Cajun restaurant.

Day Three: Wednesday, April 03 - Cooking Class
Breakfast:

Morning: More cooking in Cajun country!

Lunch: We will again dine on the meal we've created that day.

Afternoon: We will visit a couple of specialty food and meat markets to see where the locals shop and what they have to choose from. We will be treated to a boudin making demonstration, as well as a tasting. Boudin is a well-loved Cajun delicacy. There is a possibility that we will also be able to watch cracklins being made. Both of these local favorites are quite a taste treat!

Morning: Cooking class at Hamilton Hall or a local cooking school.

Afternoon: Class: Learn about local food traditions and favored local ingredients. Get a better understanding of traditional Cajun dishes. Followed by a film about the local plate lunch culture.

Breakfast:

Morning: A local chef will be the cooking instructor for the day. The session includes instruction, lunch, and clean-up.

Lunch: We will dine on the meal we've prepared in cooking class.

Afternoon: Weather permitting, we will take a boat ride through beautiful Lake Martinm, which has picturesque swamps and fascinating wildlife.

Dinner: Dinner & Graduation: Our farewell dinner will be at a well known local restaurant/dance hall.

Acadian VillageMuseum of authentic Acadian homes. Located on the grounds of Acadian Village are eight authentic Acadian houses dating back to 1800. There is a recreation of a General Store that was the main gathering place for the community. Onsite is a replica of a Chapel, the floor of the Chapel was made with long leaf pine that is over 200 years old. The reproduction of the Blacksmith Shop was built with weather-beaten, aged cypress boards. The shop is complete with original tools used by the blacksmith years ago. Open daily 10 a.m. to 4 p.m.
