Day One: Monday, March 18 - Welcome and Orientation 
Afternoon: Hotel check-in time is 3:00.

Dinner: Casual dinner at the hotel or local restaurant.

Evening: We will meet at 4:30, get acquainted, and review the weekly schedule. We will take time to answer your questions about the upcoming week, as well as teach you a few Cajun French words and Cajun English phrases to help you enjoy your stay in Cajun country.

Day Two: Tuesday, March 19 - Jean Lafitte Center; Vermilionville 
Breakfast:

Morning: Field trip to the Jean Lafitte Center to view a film on the deportation of the Acadians, as well as their museum, which contains artifacts from the early life of Acadians in south Louisiana to current day, followed by a trip to the Vermilionville Folk Life Village.

Lunch: La Cuisine de Maman (on-site café at Vermilionville).

Afternoon: Class - A Personal Cajun History. Our instructor has traced his family's journey from France to Acadie, back to France and on to Louisiana. His story will clarify some of your questions about the Acadians and their exile from Nova Scotia.

Dinner: Dinner at one of our local restaurants to be announced at later date.

Day Three: Wednesday, March 20 - Jungle Gardens & Tabasco 
Breakfast:

Morning: One of the main attraction to this area is Avery Island's exotic 200 acre Jungle Gardens with its beautiful Bird City, home to egrets, herons and other water birds. We'll take a driving tour through the gardens to get to the man made rookery, but even if our timing isn't right for the azaleas and camellias, we'll enjoy the scenic beauty of moss draped oaks, as well as the stands of many exotic varieties of bamboo. Remaining on Avery Island, we will visit the home of world-famous Tabasco Pepper Sauce. We will view an information video on the history of the McIlhenny company, as well as how the sauce gets from the fields to your table.

Lunch:

Afternoon: Class - Life & Culture of the Atchafalaya Basin - Our instructor, who is an accomplished photographer and author, as well as a crawfisherman, will give a visual presentation of his work. The presentation will contain images captured in the largest river swamp in North America, the Atchafalaya Basin. Our instructor will also enlighten us to the plight of the endangered lifestyle of the bayou Cajun

Dinner: Local restaurant TBA.

Evening: Jam session with local musicians.

Day Four: Thursday, March 21 - McGee's Landing/Lake Martin Rookery 
Breakfast:

Morning: Field trip to McGee's Landing in Henderson, where we'll board a pontoon boat for a tour of the historic Atchafalaya basin.

Lunch: To be announced.

Afternoon: Lake Martin Rookery is a sight to behold. The setting is classic Louisiana: Spanish moss draped cypress trees and water tupelo; nesting egrets, roseate spoonbills, blue herons; and yes, alligators! We'll take our time and enjoy the view. Be sure to have your binoculars and cameras handy.

Dinner: Local Cajun restaurant.

Day Five: Friday, March 22 - Cypress Lake/Cajun Dance Lessons 
Breakfast:

Morning: A visit to UL Lafayette's jewel in the middle of campus, Cypress Lake. Cypress Lake is a beautiful microcosm of swamp life, with moss draped cypress trees, tupelo gum, native flowers, birds, alligators, and fish.

Lunch: TBA

Afternoon: Learn the Cajun Waltz and Two Step in order to prepare for some REAL Louisiana wild life! We will have a short program where you will receive Honorary Cajun Certificates, as well as sample a favorite Cajun treat - boudin!

Dinner: Included.

Evening: Dinner and dancing at one of our most famous local restaurant / dance halls.

Day Six: Saturday, March 23 - Departure after breakfast, which is available from 6:00 - 9:00 am.

Acadian VillageMuseum of authentic Acadian homes. Located on the grounds of Acadian Village are eight authentic Acadian houses dating back to 1800. There is a recreation of a General Store that was the main gathering place for the community. Onsite is a replica of a Chapel, the floor of the Chapel was made with long leaf pine that is over 200 years old. The reproduction of the Blacksmith Shop was built with weather-beaten, aged cypress boards. The shop is complete with original tools used by the blacksmith years ago. Open Tuesday through Saturday 10 a.m. to 4 p.m. Closed for major holidays.

University Art MuseumThe University Art Museum's Permanent Collection consists of more than 1,500 works of art, including paintings, prints, drawings, sculpture, and photographs.
