Dinner: Dinner is generally at 6:00 p.m. The kitchen is known in the Road Scholar world for its open format and use of the freshest ingredients. Many have called the results “Road Scholar gourmet.” Some typical menu items (may not be available in all programs): Black Bean Soup with plum tomatoes, corn kernels, black beans and fresh coriander, with optional dollop of sour cream. Chicken Marbella, using boneless, skinless chicken thighs, prunes, green olives, garlic, and white wine; served with basmati rice and glazed carrots.
